Both brew really fast and makes a damn good cup of coffee. The main differences is the base material, the ST uses aluminum base instead of plastic base. There has been complaint from users from The Bunn Velocity BT that their brewer produce some plastic smell when brewing, most likely due to the plastic base touching the hot pot.
BUNN is well-known in the world of commercial coffee makers, so you can expect a great consistent quality for their home prosumer product as well.

Both brew up to 10 cup of coffee in 3-4 minutes.
Both have vacuum insulated thermal carafe to keep coffee warm for up to 2 hours.
Both are reservoir-style home brewer, means you fill in the water manually to the tank in the back. No need for direct plumbing into the machine.
While it is by no means a replacement for my La Marzocco GS/3 espresso machine (Love the machine), a coffee brewer is an excellent choice when the day is long and I want the mindset that the coffee is always available in the carafe anytime I want it. A coffee brewer is fast, easy to operate, and more importantly easy maintenance.
While there are other good consumer brands coffee brewer like KitchenAid, Cuisinart, Hamilton Beach, there are very few companies who are also a reputable commercial grade equipment. Until another contender comes into the competition, I’d stick with a BUNN coffee brewer.
